The moment I found out I couldn't eat donuts anymore...
Recipe & Instructions
Since being deflated after my discovery of not being able to eat donuts anymore, I made it my mission to come up with an alternative wheat-free recipe to make at home. So here is my O'nut recipe (see what I did there? Donuts are O shaped and my surname is O'Reilly. Ahem.
Dry Ingredients:
1 Cup of ground almonds
1/2 cup of gluten free self raising flour
1/4 cup of coconut sugar
1/4 tsp salt
1/2-1 tsp cinnamon
1/4 tsp ground ginger
Wet Ingredients:
1 cup of properly mashed ripe banana
1/4 cup of dairy free milk
1 egg brutally whisked
2 tbsp maple syrup
1/2 tsp the best vanilla extract you can find
Directions:
Mix all the dry ingredients together, taking care to minimise all the lumps. Mix all of the wet ingredients together (mash the banana first though).
Add all the wet mix into the dry and briefly mix together until combined.
Smash it into a preheated oven of 180°C. They tend to take between 13 and 20 minutes.
Use a cake tester to check them at the 13 minute mark; if they're still a little underdone then chuck them in for a further 5 minutes.
When cooked, leave to cool for a while if you can hold on that long. They should sort of look like this:

I also made an amazing sauce/ganache thing for the donuts. Here's the recipe:
Sauce/Ganache thing:
4 tbsp coconut oil (melted)
2 tbsp maple syrup
3 tbsp raw cacao
1 tsp vanilla
Combine all of the above in to a heavenly goo and leave in the fridge for 5 minutes to thicken whilst the donuts rest after their oven adventure.

Drizzle all the lovely goo onto the donuts using a teaspoon - skillfully & artfully like I did.
